Cane is quickly brought to the mill as soon as it is cut in the fields. The mills are typically powered by small diesel engines. Cane is hand fed through the churning rollers and fresh cane juice flows out into collection vats. The juice is then poured into the waiting fermentation vats, as wild fermentation will begin immediately.⁠
