The Bimber distillery in North-West London was founded in 2015 and began production in May 2016. It is equipped with open-top American white oak washbacks where fermentations last a minimum of seven days. This deeply expressive version was matured in a cask previously used for an imperial stout, and explores incredibly diverse lands of flavours and aromas with equal strength of character and originality.
