In rural Ireland, out of necessity since the dawn of time, peat has been the timeless source of fuel, its sweet pungency evoking generations gathered around ancient thatch-roofed black looking houses. This exceptional whiskey revives an ancient custom of drying barley over peat smoke, once embraced by farmers and illicit distillers but died out from the 1850s.
Cuvée Fumo seamlessly unites Irish peat and barley from four Single Farm Origins for complexity and incorporates two distinct harvests for harmony, peated at 55ppm (Heavily Peated). It rekindles the earthy, wild, and raw traditions deeply rooted in Ireland’s distant past – a true testament to Ireland’s heritage, bringing you a whiskey that encapsulates the spirit of the old ways.
Tasting Notes
Colour: Rich gold with unctuous oils.
Nose: Rich, sweet, hearthside style of peat, augmented by Demerara sugar. Hessian, oyster shells. Wet limestone. Hemp and tar. Peach skins and russeted apples. All given ballast by deep, gristly malt and a touch of polished oak.
Palate: Sweet heather honey and tablet intermingle with sackcloth, sea salt and pitch. Charcoal and autumnal hearth. An almost umami touch of hoisin sauce alongside warm hay and savoury spices.
Finish: Lingering, with lanolin and earthy hearthside turf.
