All of Waterford’s whiskies use 100% demonstrably Irish-grown barley – one farm, one terroir, at a time – without adding any imported grains to meet specifications. Following a strict methodology that originates in the greatest vineyards of France, each farm’s crop is kept separate from field to barrel. Using a mash filter instead of a mash tun, extensive 120-hour + fermentations, and exceptionally slow distillations, Waterford produces the most natural and respectful expressions of barley possible. In particular with Cuvée Luna, a whisky made from 100% Biodynamic grown barley.
Eccentric to some, regenerative to others, Biodynamic agriculture goes beyond the ordinary ecological mindset. Drawing upon ancient lore of lunar cycles and exotic preparations, it seeks to charge soils with vitality and barley with vibrancy. Practised by the most visionary and curious, Waterford too were intrigued about the most natural flavours they could capture in spirit.
Distinct biodynamic harvests from original biodynamic pioneers Trevor Harris, Alan Mooney and John McDonnell are brought together in this profound, esoteric and evocative Cuvée Concept.
