In pursuit of perfection, 𝐖𝐢𝐝𝐨𝐰 𝐉𝐚𝐧𝐞 has developed the unique corn varietal, baptized “𝐁𝐚𝐛𝐲 𝐉𝐚𝐧𝐞". This corn varietal is an open-pollinated cross between two heirloom varieties: Bloody Butcher, which dates back to 1845 in the US, and Wapsie Valley, favoured by the Amish and grown since around 1850. The early growing years were curated by their team, with only the finest kernels selected for eventual growth in the fields. Years later, that corn—proprietary to Widow Jane—was harvested, driven to Red Hook, where it was mashed, fermented, and distilled. It was then gently placed into new, charred American oak barrels and aged for 4-6 years. Hand-assembled in Brooklyn, blended only a few barrels at a time, it’s a true small-batch bourbon. This special grain delivers a depth and creamy-spiced finish that is a rare treat even for the most discerning bourbon lover. On January 1, 2000, three casks were filled at midnight, with releases scheduled for their 12th, 15th, and 18th birthdays. The first of these, known as the ‘Millennium Release’, was bottled in 2012 as a 12-year-old whisky. It underwent initial maturation in an American oak ex-bourbon cask before being finished in a Matusalem oloroso sherry cask. This 𝐂𝐎𝐀𝐋 𝐈𝐋𝐀 showcases the w This 𝐂𝐎𝐀𝐋 𝐈𝐋𝐀 showcases the wonderful complexity afforded by the combination of peated malted barley and sherry wine. Further highlighting this complexity, the flavour and aroma palette energetically reveals stunning fruity, chocolaty, malty, salty, smoky, peaty, spicy and floral sequences. 👃: Full-bodied, unctuous. On the first nose, notes of apricot, cherries in brandy, white peach and raisin drive aromas of malted barley, iodine, smoke and dried peat into the background. Soon, however, more balance arrives. Allowed to breathe, pepper, salted butter caramel, chocolate, orange and heady florals (hyacinth, peony) bring the aroma palette lots of sophistication. 👅: Clear, precise. On the attack, now-rooty peat (gentian), ash and camphor appear alongside milk chocolate, heather honey, quince jelly and apricot coulis. The chocolate gradually becomes dark (100% cocoa). The mid-palate is equipped with a superb mouth-watering bitterness, allowing glimpses of a lemony and fruity (pear) spirit. At the end of the palate, sublime flavours of honeysuckle and gillyflower spread through the air. ✅: Long, very serene. The slightly meaty start of the finish (bacon, leather) is above all covered in a fine layer of ash. Chimney hearth is not far away. A certain minerality brings to mind the warmth of a firebrick. On the retro-nasal olfaction, exotic fruits (mango, guava) refresh the resinous (pine, Vosges cough sweets), earthy and balsamic (sherry vinegar) finish. It was in fact the collaboration and friendship made with Chamarel rum distillery that was the spark for H.A.S. Navigate World Whisky wished to bring Chamarel well and truly into the South African market and finally make it’s premium rum available Country wide. We believed that Chamarel was finally producing some of the finest rum in the world and the lockdowns under COVID allowed us a chance to sit together and work out the best way to realise this ambition. There was no question that bottling Chamarel’s rum in South Africa would allow for a big economical benefit which would ultimately make Chamarel more successful in the market. A journey of cask selection and deep diving began and once we had accumulated enough liquid we realised it was time to start taking the aging environment very seriously. After all some of this rum is from the oldest distillates ever produced and importing such quality in bulk is just not first prize, you stop the rum in its tracks or change the current home (cask type) of a rum that is already very happy! What we didn’t expect to realise so quickly was just how favourable the Highveld Aging environment just may be. Aging at altitude is well documented for having some significant aging benefits and with our strong seasonal contrasts and warm climate, it was clear, The Highveld Aging Series was born. Two Bottled In Bond expressions from Boulder 🥃 Two Bottled In Bond expressions from Boulder 🥃 🥃 𝐀𝐦𝐞𝐫𝐢𝐜𝐚𝐧 𝐒𝐢𝐧𝐠𝐥𝐞 𝐌𝐚𝐥𝐭, 𝐁𝐨𝐭𝐭𝐥𝐞𝐝 𝐢𝐧 𝐁𝐨𝐧𝐝 This expression was aged 4 years (almost 5, really), bottled at 50% abv, and was of course made in Boulder Colorado. This American Single Malt Whiskey is a representation of traditional pot distillation techniques combined with the American ageing style of using freshly charred, virgin oak barrels. 𝐁𝐨𝐮𝐫𝐛𝐨𝐧, 𝐁𝐨𝐭𝐭𝐥𝐞𝐝 𝐢𝐧 𝐁𝐨𝐧𝐝 Milled, mashed, fermented, distilled and finally aged in Boulder, Colorado, this double Pot Still Bourbon has been proofed with Eldorado Springs water. The mash bill consists of 51% corn, 44% malted barley and 5% rye. With a higher than usual percentage of malt barley in this Bourbon, it has a more malty and less sweet character.
