What do “marks” denote? 🤔 Distilleries cre What do “marks” denote? 🤔 Distilleries create specific rum formulas classified by their mix of flavours, which are derived from different types of alcoholic compounds, called “congeners”. In a quantitative way, the number of congeners (made up of esters, aldehydes, and superior alcohols) creates the specific bouquet of each rum. The combination of these congeners, or flavour molecules, contribute to the identity of the spirit and can be measured according to an index measuring esters in grams per hectolitre of pure alcohol. The index has a legal limit of 1600 gr/hlpa for Jamaican rum. All distilleries used to have a specific portfolio of formulas for the sale of rums sold in bulk. We've got exactly what you need to enjoy the festivities😉 Hampden Rum Cake: Ingredients: 4 whole eggs + 3 yolks⁠ 12cl of Hampden Estate Rum⁠ 3 teaspoons of natural vanilla extract⁠ 350g flour⁠ 160g brown sugar⁠ 220g caster sugar⁠ 2 teaspoons of baking powder⁠ 1/2 teaspoon of salt⁠ 250g of softened butter⁠ ⁠ Method:⁠ In a large bowl, add the whole eggs, the yolks, the Hampden and the vanilla. Mix everything together with a whisk and set aside.⁠ ⁠ In another bowl combine flour, brown sugar, powdered sugar, salt and baking powder. Mix at low speed until completely combined. Add the softened butter, cut into large cubes, and mix until incorporated. ⁠ Add a first third of your liquid mixture to the bowl and mix until incorporated, scraping the sides and bottom.
