Cognac, France / Petite Champagne
In 1995, Jean-Luc Pasquet and his wife decided to organically cultivate their vineyard located in the terroirs of Grande and Petite Champagne. They obtained the “Organic Agriculture” label in 1998. The Cognac they develop are mainly from the Ugni Blanc grape variety. In recent years they have re-established Folle Blanche, the king grape before the phylloxera crisis of the end of the 19th century. In order to obtain a true local wine to be distilled, the so-called “endogenous” fermentations are ensured by the yeasts of the harvested grapes. Deeply rooted in the limestone soil from which it comes, through its minerality, this venerable version has retained an impressive youthful expression of naturalness and freshness.
