Mezcal, Mexico / Oaxaca
Made from three varieties of agave, this mezcal produced in San Pedro Taviche shines with purity. Its crystalline and limpid character is sprinkled with floral and heady scents enhanced with spices and pepper. Its oxidative character recalls that of the great yellow wines of the Jura. TASTING NOTE
Colour: Colourless.
Nose: Full, fine. Generous, the first nose delivers pell-mell, heady flowers (jasmine, hyacinth), white fruits, salt and a pepper with very fine grain. It evolves with notes of almond and fresh nuts. Lactical, he suggests tasting agave milk.
Palate: Rich, elegant. With firmness, it firstly delivers strong spices (black pepper) and peppers. Then, it softens on honeyed notes before going up in power on the spices. Its oxidative character recalls that of the great yellow wines of the Jura (curry, nuts).
Finish: Long, balanced. For a long time, it became one with the mouth. She headed for Alsace and her late harvest of riesling with flavours of candied fruit, coffee and wilted flowers. Suddenly, the swordfish agave is peacock-tailed to better signify that we have returned to the province of Oaxaca. The retro olfaction is herbaceous and lactic.
