Master Distiller Noel Sweeney began his distilling career at Cooley Distillery, Co. Louth in 1989. Having qualified with degrees in Analytical Chemistry and Total Quality Management, it wasn’t long before natural passion assured him the role of chief distiller/chief blender.
Throughout the 28 years that followed, he helped establish many new Irish Whiskeys and is credited for the release of the multi-award-winning Connemara (peated) Irish Whiskey, Greenore Single Grain, and many others.
These expressions have recently been complemented by the multi-award-winning Fercullen whiskey from Powerscourt. Each of these single casks have been released using spirit that was laid down by Noel and his teams.
Tasting Notes
Colour: Pale Gold.
Profile: Malty and tropical.
Nose: Tropical fruits, pineapple. It smells malty and yeasty, dusty, baked pudding, poached apple, a hint of apricot and a faint touch of citrus. What a nose!
Second nose is nectar, pear juice, an ever so light note of vanilla, and a little spice at the back of it all, in this case a cinnamon stick.
A later visit reveals strong creamy notes, crème anglaise, icing sugar dust, and an abundance of malt. Concentrated fruit drops amplify themselves the more the whisky is allowed to open.
Palate: An incredible entry of Irish whiskey, creamy but a gentle mouthfeel with a finish that starts up everything all over again.
Finish: Long with an explosion of fruits, baked pudding, pineapple, poached fruits, spice and syrup. This is a complex dram that keeps on giving.
