Mezcal, Mexico
The first nose is marked by notes of dry earth, leather, gray pepper and peat. When aired, it becomes salty and lemony. It has gained considerably in finesse and precision. In fact, it should be given time to air out. The attack on the palate is divinely fruity and floral (rose, peony). The mid-palate takes on very warm pepper and salt tones. Lemon zest tones the back of the mouth.
