Single Malt Whisky, Scotland/Islay
With the same phenol content (50 ppm) as single cask #18/229, this “Legacy” version shows just how deeply rooted the Wills family is in the soil of Islay. It reveals two very distinct faces, one ashy, medicinal and marine, the other more suave, honeyed and tenderly herbaceous. Far from detracting from the balance of its aromatic and gustatory palette, this dual personality keeps tasters constantly on their toes.
Nose : Dense, sharp. First, the scent of sea spray wafts into the atmosphere, giving the aromatic palette the allure of a tormented seascape. Then, ashy, medicinal (balsam, strap), oily (wood wax) and rocky (pebble) aromas emphasize the strong personality of this Kilchoman.
Appearance : Light gold.
Palate : Taut, warm. Imbued with noble spices (cardamom), the palate is also particularly saline. It then gains in roundness, becoming honeyed (acacia, heather) and infused (thyme), before wisps of smoke permeate the taste buds.
Overall : Clean, balanced. In the empyreumatic (burnt wood) extension of the mouth, tasting continues to reveal flavours of toast, cough syrup and espresso roast. Flavours intimately intertwined with even more gourmet ones of baked apple and tarte tatin.
