This is the second PX Sherry Cask Matured Limited Edition in Kilchoman’s history. A first PX Sherry Cask Matured Edition was already released in 2021, but despite its name, it was a combination of PX full maturation and PX finish casks.
For this year’s release, Anthony Wills and Robin Bignal opted for a pure PX full maturation, selecting a total of 61 PX sherry casks, matured for a minimum of five years in Pedro Ximénez sherry casks previously used by Bodega Joséy Miguel Martin, Jerez, Spain.
Casks that previously held the incredibly sweet Pedro Ximénez sherry are predominantly employed for the finishing stage. This is because there is a potential risk that they might overpower the whisky’s character after a relatively brief period of maturation. In 2021, Anthony and Robin chose a combination of full Pedro Ximénez maturation and a Pedro Ximénez finish, as the primary goal for all Kilchoman releases is to preserve the distinctive Kilchoman character, regardless of the cask type. To achieve this in the case of full Pedro Ximénez maturation, relatively young casks were chosen for the release of that year. Even at the age of 5 years, these casks exhibit a pronounced sweetness characteristic of Pedro Ximénez. This sweetness harmonises exceptionally well with the typical Kilchoman smokiness and the citrus fruit notes of the distillate.
Tasting Notes
Nose: Sweet sultanas and raisins with rounded peat smoke and layers of liquorice and hints of citrus sweetness.
Palate: Brown sugar and malty sweetness then orange peel, citrus, dark chocolate, and waves of sherry sweetness.
Finish: Chocolate coated raisins, oak smoke, mixed spices and lasting PX sweetness.
