Pure Single Agricole Rum, France / Guadeloupe
Composed of 100% pure Matos cane juice (B80.0689), this small batch is the expression of the historic 4 hectares of Charles Albert Ruscade, known as Papa Rouyo. This original plot is located in Le Moule, on the clay-limestone soil of eastern Grande-Terre. Cultivated with care by Tim Synesius, one of the distillery’s master cane-makers, the canes were picked up by hand before being crushed on site. The long fermentation and the double-distillation in pot still allowed a particularly intense aromatic extraction. This rum, distilled on March 23, 2021, was reduced to Saint-Claude spring water and bottled at 62%.
