Mezcal, Mexico / Oaxaca
Made from a variety of wild agave with the pretty name of “papalome”, this mezcal is impressive in personality. Its natural finesse and elegance actually hide a temper forged from the hardest steel. He asks that we go to meet him and that we make a minimum of effort to fully savour each note of his aromatic and gustatory palette.
TASTING NOTE
Colour: Colourless.
Nose: Powerful, firm. He doesn’t give himself up right away, to say the least. Once the presentations are made, it deploys delicate notes of peppery and salty agave. As time goes by, it smells of mauve lilac and honeysuckle. With pleasure, the agave juice flows freely.
Palate: Sharp, deep. It shows an incredible freshness and at the same time a lot of rigor. Each flavour is concentrated to the extreme. Thus, candied citrus, flowers (peony), spices (coriander, cinnamon, ginger), fleur de sel and notes of straw are restored with rare precision.
Finish: Long, silky. Relentless in its need for authenticity, the papal agave shines with presence. Tannic, it shrinks the palate with lemon zest. Its minerality is extremely tense. The retro olfaction is vegetal and fruity (raspberry, strawberry).
