Mezcal, Mexico / Oaxaca
Made from a single variety of wild agave called Tepextate, this single Mezcal village is full of rusticity. From the aromas of the first nose to those of the empty glass, it naturally and forcefully reproduces the full power of the terroir on which these agaves have grown freely. We revel in the underlying delicacy of its fruits and flowers.
TASTING NOTE
Profile: petroleum, shale, ripe fruit (pear, apple). Lime, salt. Pepper and sleet notes
Colour: Colourless.
Nose: Rich, concentrated. Behind an uncompromising minerality (petroleum, shale), hides in reality a heart of tender agave and ripe fruit (pear, apple). Shortly after, it is the turn of citrus fruits (lime) and salt to make their appearance. The whole is cut with a chisel. Pepper and sleet notes punctuate the nose.
Palate: Distinctive, dense. At first, we revel in the peppery and salty notes of the agave. Then, a note of vanilla takes possession of the mid-palate. White flowers, citrus fruits, fresh and exotic fruits (pineapple, lychee) come to rest on it. Its bluish and mineral character (slate) is asserting itself more and more.
Finish: Long, full of temper. Sweet spices (cinnamon, star anise, cumin), white mint, curry, straw and iris concrete, this is what offers the heady finish. The retro olfaction pays homage to the agave and the empty glass returns to the intransigence of the nose.
