Pure Rum From Cane Juice, Phillipines
Located in Bukidnon, on the island of Mindanao in the southern Philippines, Rainforest Distillers was founded in 2015 by Marc Schulze, master distiller and producer of Kasa Kaña Rum Agrikultura, a handcrafted agricole rum made from heritage Philippine sugarcane. This rum is crafted from the local Manpu variety, fermented for 9 to 12 days with the addition of dunder and muck grown in the tropical biome of Bukidnon. Distilled in a pot still, this 2024 vintage was then aged for 20 months in casks that previously held Chardonnay white wine, deep within the rainforest. A Pure Single Rum, brimming with agricole character and expressiveness.
Nose : Lively, expressive. Initially, intense aromas of fresh sugarcane juice, pineapple, lime, and coconut milk completely permeate the olfactory space. With aeration, subtle vanilla, camphor, and herbaceous (freshly cut sugarcane) scents gradually emerge.
Appearance : Bright gold.
Palate : Clean, elegant. Marked by distinctive medicinal notes (aspirin, mustard plaster), the flavor profile is underpinned by hints of licorice and sugarcane. Then, gradually, cane sugar delicately spreads across the tongue and palate.
Finish : Fine and delicate. Floral (mimosa, broom, vetiver), it also reveals a particularly fruity character (pear, pineapple, kaffir lime). This tangy and juicy influence reaches its peak, evoking a delicious lime and basil tart. Reminiscent of sugarcane juice, the retro-nasal aroma displays spring-like tones with remarkable freshness.
