Single Malt Whisky, Ireland
Born of the collaboration between the Irish distillery and the Parisian restaurant “Frenchie”, this micro cuvée called “Rue du Nil” succeeds “Voyages Extraordinaire”, the first exclusive bottling carried out by Waterford for a partner, unveiled last year in our creation catalogue.
Aged in three types of barrels, ex bourbon (24%), French oak (27%) and moscatel (49%), it was made 100% from barley grown biodynamically.
A mixture of freshness and maturity, its aromatic and gustatory palette evolves with presence, throughout the tasting, on a syncopated rhythm, bringing with it fruity, herbaceous and vanilla sequences, each more exhilarating than the other.
Fresh and complex. Pear, vanilla, eucalyptus.
TASTING NOTES
Nose : Fresh, elegant. On the first nose, notes of white fruits (pear, apple), aromatic plants (sage, verbena), vanilla and candied lemon rub shoulders with malty aromas of remarkable purity of expression. Allowed to breathe, with a lot of naturalness, the aromatic palette gradually reveals pepper, liquorice and honey (acacia). Then, taking resolutely fruity paths, she places a basket filled with Williams pears on the front of the stage.
Palate : Lively, racy. Herbaceous (cut hay, straw) and milky (coconut, almond), the attack on the palate is also spicy (ginger, coriander) and slightly medicinal (tiger balm). Continuing, the mid-palate harmoniously evokes a verdant field of barley. On the finish, flavors of yellow melon, white peach and almond add a fruity dimension to the taste palette.
Finish : Long, subtle. At the start of the finish, notes of eucalyptus, rosemary and savory underline the empyreumatic and freshly herbaceous character of this Waterford. In the aftertaste, vanilla flavors (flan) extend the tasting time to infinity, which ends in a deliciously malty, fruity (pear, mirabelle plum) and floral (lily, lavender) retro-olfaction. Rich in dry extracts, the empty glass reveals notes of porridge, iris concrete and red fruits (raspberry, strawberry).
