Shochu D’Orge, Japan
Located in Yamaguchi Prefecture in southern Japan, Ohmine’s pioneering brewery takes advantage of abundant local natural resources: Benten water, also known as the water of the gods, and locally grown, additive-free rice. Produced from the 50% polished Yamadanishiki variety, this Ohmine classic with its subtle balance and fruity, floral muscatel notes is for amateurs and experts alike.
Juicy and greedy. White grape, rice, sweet and sour.
TASTING NOTES
Nose : both lively and unctuous. Very slightly fruity (apple, pear, almond), the first nose also reveals floral aromas (hawthorn, white peony), all-flower honey, spices (pepper, cinnamon, ginger) and cut hay that are remarkable in their presence. Allowed to breathe, the aromatic palette opens up with notes of lemon, elderberry and black grape.
Appearance : colourless
Palate : clean, tense. Forming one body with the nose, the attack on the palate is very delicately tannic and fibrous (liquorice stick). In the mid-palate, red fruits (strawberry, currant) and even flavors of raspberry brandy rub shoulders with extremely smooth chocolate tones. Just as fruity, the finish reveals many dried fruits (currants, figs, dates).
Overall : tender, greedy. Both liquorice and chocolate, like the nose, the start of the finish has a touch of great elegance. Then, magnificent notes of bitter almond and walnut give a lot of length to the aftertaste. Exotic (coconut), the retro-nasal olfaction is refreshed by flavours of pine, coriander and white mint. The empty glass reveals many aromatic plants (tarragon, sage, bay leaf, sorrel).
