Agricultural Rum, France / Martinique
The house Lajus, composed of a small sugar mill and a water mill, was born around 1670 at Carbet. However, it will be necessary to reach 1920 so that Jacques Bally, its new owner, begins there the production of rum from a column of distillation which he himself created. By 1924, he was the first to raise his rums in barrels. Now developed at the Saint-James distillery, Bally is considered one of the most traditional rums in Martinique and carries the AOC. True land of contrasts, this version asks the taster to take his pilgrim’s staff to go to meet him. From then on, he discovers a particularly aromatic palette of flavours that never loses sight of his goal: to maintain a remarkable unity of tone from beginning to end.
