Dariusz Plazewski named his distillery ‘Bimber’ after the Polish word for ‘moonshine’. Keen to know exactly what every cask has previously contained and for how long, he set up a very strict selection process for barrels. With its particularly delicate texture, the mid-palate of this ex-cognac cask is reminiscent of a great Speyside single malt.
