TASTING NOTES
Nose : Both rich and fine. On the first nose, delicately ashy smoke and oily peat rub shoulders with honeyed aromas (lime blossom, bay leaf) and candied (pineapple, apricot) and dried (date, fig) fruit. The decor is set, the Caol Ila style shines. Allowed to breathe, a lovely vegetal sequence (agave), roasted, lemony and floral (marigold, freesia) gradually takes hold. Simultaneously, scents of curry and ginger permeate the surrounding atmosphere.
Appearance : Topaz.
Palate : Lively, sharp. On the attack, blocks of peat spread over the palate while notes of sea spray, fleur de sel, then shellfish and crustaceans bring us closer to the seaside. Gradually, flavours of porridge and barley in the process of germination diffuse with great sweetness, followed by a pleasant liquorice bitterness on the finish.
Overall : Long, luminous. A subtle blend of peat and linden honey, the start of the finish particularly highlights the naturally malty character of the taste palette. Incredibly delicate, the aftertaste is mineral (chalk), tenderly chocolatey and nobly spicy (saffron, cardamom). Animal (bacon), the retro olfaction is also medicinal (mustard poultice). The empty glass is intensely peaty, vegetal (artichoke heart) and malty (brew).
