Clairin, Haiti
From the blend of four traditional Clairins aged 18 to 24 months (Sajous, Vaval, Casimir and Le Rocher) aged in barrels that have contained rums (Bielle, Caroni, Mount Gay, etc.) and whiskeys (Benriach, Widow Jane , Buffalo Trace, Jack Daniel’s), this version, as it matures, has appropriated the many empyreumatic, fruity, floral, spicy, herbaceous and honeyed virtues of each of its constituents. Better still, particularly exuberant and metaphorical, its aromatic and gustatory palette echoes Aristotle’s famous maxim: The whole is more than the sum of the parts.
Tasting Notes
Colour: Topaz
Nose: Full, concentrated. A note of burnt rubber initially gives a lot of personality to the aromatic palette. Behind this empyreumatic sequence, we perceive the mark of a very pure Clairin, abundantly fruity (strawberry, raspberry), floral (honeysuckle, thyme) and vanilla. On aeration, it becomes more and more oily (olive, savory), herbaceous (sage, verbena) and camphor. Like a river that overflows from its bed, cane juice very gently floods the lush landscapes of equatorial vegetation.
Palate: Both lively and smooth. Spicy, the attack on the palate is medicinal (benzoin) and musky. It then becomes wonderfully fibrous (sugar cane), liquorice and herbaceous (white mint).On the mid-palate, one fruit dominates: plantain. hen, heady flowers (geranium, lavender) are gradually covered by cocoa beans. In the aftertaste, the plantains have been pan-fried and finely caramelized.
Finish: Long, delicious. Flavors of flower, honey and sugar cane liquor bring a lot of voluptuousness to a radiant start to the finish of fullness and complexity. Gradually, succulent base notes of artichoke stimulate the taste buds. Intimately linked and very evocative, the retro-olfaction and the empty glass send us back to the middle of a sugar cane field while flavors of lime and mint emerge from the depths of our childhood memory.
