Single Malt Whisky, Scotland / Islay
The first distillery built on the island of Islay for 124 years, Kilchoman was founded in 2005 by Anthony Wills. Fourteen years later, given the success of its single malt with amateurs, a second distillation room, a new malting area and a new kiln have been created on the same site.
Made from barley grown and malted by the Rockside farm, owned by the distillery, this version, which displays a phenol level of 20 ppm, reproduces in a way that could not be more faithful the character more smoky than really peaty. this particularly airy, fruity and saline single malt.
Malty, smoked. Pear, pineapple, floral notes, anise.
TASTING NOTES
Nose : Fresh, subtle. Freshly herbaceous (cut hay, alfalfa), the first nose quickly evolves towards aniseed and very slightly empyreumatic notes (bitumen, incense). Allowed to breathe, fresh and juicy fruit (pear, greengage, white currant) rub shoulders with delicate floral (lily of the valley, lilac) and exotic (lychee) aromas. Peat essentially occupies the background of the aromatic palette.
Appearance : Pale gold
Palate : Dense, lively. Dynamic, the attack on the palate places equal flavors of root peat, malted barley, exotic fruits (pineapple, banana) and peppermint. Gourmand, the mid-palate ventures into vanilla and chocolate regions of extreme finesse. More smoky (cigar) and ashy, the finish also reveals literally bewitching flavors of jasmine.
Overall : Long, racy. Lemony, exotic (pineapple) and earthy, the start of the finish has an exquisite grainy touch. Slender (grain of rice), the aftertaste evokes a field of barley swept by spray. Saline, the retro-nasal olfaction reveals a peat reduced to its simplest expression. The empty glass is both rooty (ginger, gentian), malty and chocolatey.
