Aged for fifteen years in a tropical climate according to the solera system, this version proves to be attractive, balanced and solar at the same time. The finesse of its woody notes, the complexity of its fruity register, the floral and heady temperament of its aromatic palette and the greedy character of its gustatory palette are the highlights of a tasting that combines in a remarkable way dynamism and serenity.
Tasting Notes
Colour: Copper–orange.
Nose: Both ample and unctuous. Delicately chocolaty (cocoa powder) and finely woody (Emery cloth, beeswax), the first nose shines by its balance. When aired, black pepper and mustard seeds give a lot of dynamism to the aromatic palette. Gradually, sugarcane and heady flowers (hyacinth, carnation) embalm the ambient atmosphere.
Palate: Fine, nuanced. Very fruity (orange peel, apricot], the attack in the mouth is different from the nose. The middle of the mouth is occupied by flavours of pipe tobacco, lime blossom and baked apple. Increasingly greedy, the aftertaste even evokes a delicious tarte Tatin.
Finish: Long, silky. At the beginning of the finish, a thin layer of salted butterscotch delicately coats the taste buds. Then, as you go along, exotic and juicy fruits (mango, guava) refresh the very end of the mouth. In retro olfaction, warm cane sugar spreads around the palate. The empty glass is heady (praline, sugared almond).
