Rum, Jamaica
This small batch of five casks was made from rums distilled in pot stills from New Yarmouth (2005), Long Pond (2005), Clarendon Estate (2007), Lluidas Vale Village (2008) and a column distilled rum by Clarendon Estate (2007). On the nose and in the retro-olfaction, it reveals empyreumatic notes of hydrocarbons emblematic of Jamaican rums. Between these two highlights of the tasting, vanilla pods, heady flowers, exotic fruits and flavors of sugar cane ensure a relay full of verve and overflowing with generosity.
Rich, powerful. Pineapple, arnica, ginger.
Palate : Rich, substantial. Very different from the nose, the attack on the palate is initially lactic (coconut) and vanilla (pod, flan). A very nice vegetal sequence follows (sugar cane, liquorice stick). In the mid-palate, notes of wax and white mint ensure a fresh and unctuous transition. The finish is tenderly praline, spicy (cinnamon, nutmeg) and slightly camphorated.
Overall : Long, taut. Very herbaceous (bay leaf, lime blossom), honeyed (lavender), heady (geranium, tuberose) and peppery, the finish gradually evolves towards more exotic tones (pineapple, banana). In the aftertaste, flavours of sugar cane and vanilla harmonize with great delicacy. The retro-nasal olfaction is in turn vanilla and empyreumatic (tar, rubber). Very rich and intense, the empty glass is unmistakably reminiscent of the first nose.
