The Sanchez distillery is a small family business established for over 150 years in Candelaria Yegolé, a village in the state of Oaxaca. It has been four generations that the Sanchez maestro mezcaleros have followed one another from father to son to develop artisanal mezcales of exceptional quality. The Jabali agave is a wild agave very present in the “Sierra Sur” of the state of Oaxaca, where it takes up to 15 years to reach maturity in a dry climate. Its fibers are used by certain communities to make ropes, commonly called “Jabalinas”.
