Mezcal, Mexico
A traditional mezcal made from wild tepextate agave (aka marmorata), a rare type of agave with a distinctly herbal and earthy character. The agave is roasted in earth pits before wild fermentation in wooden vats, double distillation in copper stills and bottling. The mezcal is softer than many tepextate, with fruity notes balanced by peppers and peppery spice, and sweet pipe-tobacco smoke.
