Founded in 2008 by David Vitale, the Starward distillery moved to Port Melbourne in 2016. A 7,000-litre still has been installed to replace the old 1,800-litre wash still, which was kept on as a spirit still. This bottling was first matured for three years in a charred American oak barrique having previously contained an Australian red wine, and then for two years in an Australian Tawny port cask. The incredibly well-balanced palette of flavours and aromas reveals an intensely fruity, spicy and malty character.
