Pure Cane Juice Rum, Haiti
Founded in 2004, the Chelo distillery carries on a fifty-year-old family tradition. Located in the north of Haiti on a windswept plateau, it is surrounded by a 30-hectare plantation where Michel Sajous grows the Cristalline cane variety.
This version is the result of a natural fermentation with indigenous yeasts, lasting between five and eight days, and distilled over an open fire in a pot still. It is a blend of casks that have previously contained rums from Hampden, Mount Gay, Bielle and Caroni, as well as whisky from the Benriach distillery and, finally, bourbon. This version was aged in Haiti in the warehouses of the Distillery de Port-au-Prince for 5 years.
The flavours are Long and fleshy. With delicate cocoa and candied registers, the finish develops notes of ginseng root, florals (dahlia) and empyreumatic notes (crème brûlée). The retro-nasal olfaction reveals milky (coconut), tropical (roasted apple) and light menthol tones, highlighting this Vieux Sajous’s incredible freshness.
