The term ‘Bottled in Bond’ has been used as both a statement of age, as well as a statement of quality. It follows a government mandated set of guidelines, specifically that whiskey must be distilled on site (no sourcing), must be at least four years old and of the same distilling ‘season’, and bottled at 50% ABV. Milled, mashed, fermented, distilled and finally aged in Boulder, Colorado, this double Pot Still Bourbon has been proofed with Eldorado Springs water.
The mash bill consists of 51% corn, 44% malted barley and 5% rye. With a higher than usual percentage of malt barley in this Bourbon, it has a more malty and less sweet character.
Tasting Notes
Nose: This expression of whiskey leads with notes of apple, banana, and bubble gum.
Palate: Cedar, salted toffee and rhubarb. Rich, yet soft mouthfeel, hints of freshly cut wood alongside flavours of oatmeal cookie, mint, and apple.
Finish: Extra long, chewable finish with notes of cinnamon, black tea, walnut, biscuits and applewood smoke.
