Rum, Saint-lucia
Born in 1972 from the merging of the Dennery and Roseau Bay distilleries, Saint Lucia Distiller’s Ltd is equipped with one continuous double still, two John Dore pot stills and one 8,000-litre Vendôme pot still, which was used to create this Chairman’s Reserve. A subtle mixture of exuberance and classicism, this version beams with maturity and complexity. Exotic, heady and nobly woody, the flavour and aroma palette stands out for its sophisticated texture, particularly notable on the delicately liquorice finish.
TASTING NOTES
Nose : Rich, heady. Subtly empyreumatic and oxidative (brandied cherries), the nose is fruity (orange) and syrupy (hot cane sugar). Allowed to breathe, it is bestowed with aromas of beeswax, acacia honey and sandalwood.
Appearance : Orange Copper.
Palate : Clean, lively. The deliciously jammy attack (apricot) is saffrony. The exotic mid-palate (banana, guava) becomes increasingly powdery (cocoa) and spicy (ginger, cinnamon). The end of the palate becomes floral (iris, violet) and mineral (slate).
Overall : Long, spirited. The juicy and fleshy (apricot coulis, quince jelly) start of the finish moves much closer to the sugar cane. Equipped with a beautiful fresh and herbal bitterness, the after-taste is marked by superb notes of vanilla pod and green liquorice.
