Mezcal, Mexico / Oaxaca
Very pale gold in color. Complex and finely wooded, the aging in barrels clearly puts its leg on the aromatic palette. Thus, notes of oak and resin form a first olfactory screen. Behind this first curtain, we find salt, pepper, limes, agaves and more surprising, exceptional notes of cauliflower and frangipane. The mid-palate is tinged with red (strawberry, raspberry). Creamy, the finish shows spices gaining power (cloves, nutmeg). With a breathtaking length, each flavor is refined and gains in precision.
