Single Malt Whisky, Taiwan / Yilan County
An LMDW exclusive
The Kavalan distillery owns its own cooperage, where it prepares STR (shave-toast-rechar) casks that have a strong influence on the final character of its single malt. After the Solist Vinho Barrique version, which was named Whisky of the Year at the 2015 World Whisky Awards, and those selected for our 2020Creation Catalogue, we now invite you to discover this new opus, whose smooth, original palette of flavors and aromas could almost be mistaken for a venerable vintage port. This is reflected in the sudden appearance of notes of black cherry and candied fig.
TASTING NOTE
Appearance: burnt sienna.
Nose: concentrated, opulent. The aromatic palette is so dense that it needs to be broken down into three sequences. 1st sequence: salted butter caramel, grilled walnut, dark chocolate, candied fig. 2nd sequence: balsamic vinegar, apricot stone, Russian leather, blood orange. 3rd sequence: aromas of liqueur wine, quinquina, tarte tatin and pipe tobacco.
Palate: creamy, balanced. The attack creates the pleasant sensation of chewing on caramel bonbons. With incredible smoothness, it develops notes of Corinthian raisin and mocha. Next, a fruity (cherry, prune) and chocolate rancio brings lots of energy to a mid-palate with incredible length. Gradually, the taste buds are coated in lime blossom and heather honeys.
Overall: long, fleshy. The empyreumatic start of the finish is characterized by notes of apricot stone, roasted fig and toffee. As a dessert, fans will particularly enjoy the poire Belle-H?l?ne that rises from the very end of the finish. On the retro-nasal olfaction, zan liquorice sweets, iris butter and recollections of fortified wine (Rasteau) refresh the palate. Nobly spicy (saffron, cardamom), the empty glass reveals moving aromas of antique furniture.
