Nose: Very complex, the nose breaks down into five aromatic sequences.1st family: juicy orange, toasted walnuts, Emery cloth.2nd family: star anise, black pepper, incense, beeswax.3rd family: cloves, cane, cumin, mustard, curry.4th family: mango, cayenne pepper, apricot and apricot kernel.5th family: thuja, cedar, flambeed banana, hyacinth, lily. It should be noted that this rise in power is done gradually and in a way that could not be more harmonious.
Palate: Lively, dense. Of rare concentration, the attack on the palate takes up the entire fruity palette of the nose, including the apricot kernel. Gradually, notes of vanilla, coconut milk and maple syrup give it a lot of smoothness and freshness. In the mid-palate, malted and unmalted barley grains that compete in intensity could serve as a definition for the notion of Single Pot Still. Very Irish therefore, the palate becomes more and more pastry (financier, lemon cake), herbaceous (lime blossom, rosemary).In light of the above, the finish is impressively lyric.
Overall: Long, loose. From stewed fruits (pear, plum) to red fruits (strawberry, raspberry) and notes of salted butter caramel in flavors of bouquet garni, the start of the finish directs the course of the tasting towards notes of tobacco, coffee and gianduja. Both creamy (flan) and tangy (lime), the very end of the palate has lost absolutely nothing in concentration. In retro-olfaction, the exotic fruits (mango, guava, persimmon) are covered by black peppercorns and almond milk. The empty glass gives us a glimpse of open jute bags overflowing with spices (pink pepper, star anise, cumin, nutmeg).
