Rum, Guadeloupe
From its past as a sugar island, Marie-Galante has preserved the cultivation of varieties of sugar cane that have disappeared. In 2004, Luca Gargano took Gianni Capovilla to Marie-Galante to convince him to produce the best agricultural rum in the world. Undisputed master in the distillation of eaux-de-vie, Gianni Capovilla accepts the challenge and installs a still in the Bielle distillery in 2005, then a second in 2007. Now based at Père Labat, they produce this rum again white that has become a cult, a real cane concentrate!
TASTING NOTES
Nose : ample, airy. The sugar cane is expressed with great delicacy. It proudly carries the aromatic palette. Its white (peach, pear), red (raspberry, cherry brandy), exotic (pineapple, passion fruit), its tertiary notes (light tar, leather, tobacco), dried fish, hay and of fresh ginger are captivating and carnal.
Palate : rich, generous. Its fruity and pitted notes are reminiscent of a Fougerolles kirsch. Some spices (star anise, cloves, cinnamon) feed the mid-palate. It develops into citrus fruits (grapefruit, bergamot) and white flowers (lilac, lily of the valley). Vanilla, it oscillates between frangipane and dried fruits (pistachio, almond).
Overall : long, unctuous. The fruits are candied, some are even transformed into jam (cherry, strawberry). Geranium flower and rose petals envelop mineral notes (pencil lead, petroleum) in their heady fragrances. The empty glass gives pride of place to the apricot kernel and star anise.
