This Savanna was aged in a humid warehouse and is remarkably fresh and smooth. A fantastic combination of subtlety and power, its palette of flavors and aromas reveals magnificently ethereal floral notes, an extremely diverse fruity register, perfectly placed spices and exquisite vanilla and chocolate tones. These are accompanied by a hardy sensation of fullness.
TASTING NOTE
Appearance : topaz.
Nose : fresh yet full-bodied. The very original first nose reveals aromas of sugarcane flower, dark chocolate, geranium and flambed banana. Outstanding! Allowed to breathe, it develops notes of warm cane sugar, kaffir lime and lime blossom honey. Bourbon vanilla then covers the entire aroma palette. Fans of quince jelly will also appreciate the medicinal character.
Palate : clear, lively. On the attack, freshly cute sugarcane releases a juice that begins to take on oxidative flavours (sugarcane honey, artichoke, sage, geranium flower). On the mid-palate, numerous fruits (lemon, pear, pineapple, mango, pomegranate) move the colour palette from yellow to red. Next, camphor, pepper and chilli (Espelette pepper, Cayenne pepper) literally transcend the after-taste.
Overall : long, well-balanced. The wonderfully exquisite start of the finish wavers between fresh fruit (pear, apple, banana, pineapple), heady florals (iris, gardenia, gillyflower) and bourbon vanilla. The very end of the finish offers a delicious milk tart. The palette of flavours has found extreme harmony. The milky retro-nasal olfaction (vanilla flan, coconut, almond) reveals incredible unctuosity. The empty glass is at once camphoric, vegetal (sugar cane) and syrupy (lavender honey).
