The second edition of Colere continues the exploration of new barley varieties, bred outside the production system, with flavour (not just yield) as the primary objective. Colere Edition 2 is a limited annual bottling made with Talisman, a two-row winter variety descended from the irrepressible Marris Otter and matured in used casks only to relegate the oak influence to a secondary role and focus attention on the grain itself.
