Located in the southernmost part of Japan, on Amami Oshima Island, Yamada Distillery was founded in 1957. Representing the 2nd and 3rd generation of master distillers respectively, Takashi and Takahiro Yamada make a shochu from rice grown in Thailand, fermented once, to which they add locally produced “muscovado” cane sugar (a type of brown sugar) in the second fermentation. A blend of several vintages from 2016 to 2020, this version has been aged in stainless steel enamel tanks. With a great freshness of expression, its aromatic and gustatory palette unveils impressive notes of pear, peony, raspberry and coriander.
