Founded in 2015, the Bimber distillery is located in London. The excitement inspired by the release of the first single malt from this distillery in September 2019, named simply The First, can be explained by the ingredients behind its creation, which include malted barley from Warminster, Britain’s oldest maltings; fermentations that last over a week; very slow distillation in small, direct-fired wooden stills – 1,000 liters for the wash still and 600 liters for the spirit still; and strict selection of the casks used for maturation. With impressive maturity and complexity, this version aged in new oak is the perfect illustration of the masterful work of distillery owners Ewelina Chruszczyk and Dairusz Plazewski.
