Equipped with two Faraday stills and two more traditional pot stills with a capacity of 2,500 liters, the Penderyn distillery produces 400,000 liters of pure alcohol per year. Produced from the Laureate variety of barley, which is grown and malted on the east coast of England, this version immediately brings to mind the fabulous Penderyn 2007 Cask No. 71 from the 2020 creation catalogue. Like its predecessor, words cannot suffice to describe the feelings of joy experienced when tasting it for the first time. It is a truly extraordinary adventure into flavours and aromas.
TASTING NOTES
Nose : Fresh, elegant. The admirably exotic first nose (passion fruit, kiwi, lychee) is underscored by herbaceous (lucerne, cut hay) and vanilla fragrances. Allowed to breathe, white fruits (peach, pear) add to the aroma palette’s fruity register. Continuing its path to the world of fruits, this version gradually reveals super notes of white grapes whose shattered skins release a deliciously tangy juice.
Appearance : Bright gold.
Palate : Svelte, invigorating. On the attack, red fruits (strawberry, raspberry) and gooseberries appear. Then, returning to its exotic first love, the mid-palate is characterized by pineapple flavors. Lingering on, a bed of aromatic plants (verbena, sage, lime blossom) gently coats the palate. The end of the palate wavers between white chocolate and vanilla.
Overall : Long, lively. The spicy (grey pepper) and slightly medicinal (ointment) start of the finish is also liquoricey. Green tea notes then flood the taste buds. At the end of the finish, almond and green olive notes appear alongside expressive flavours of malted barley. On the retro-nasal olfaction, coconut milk and spearmint tea pair together beautifully to refresh the taste buds. The empty glass is a pot pourri of essential oils (rosemary, wild thyme) and freshly cut grass.
