Pure Cane Juice Rum, Mauritius
The Chamarel distillery is a little gem founded in 2008 by the Couacaud family in the south of the island, close to the Land of Seven Colors. It is a small factory, in the middle of its 300 hectares of property, 35 of which are planted with sugar cane. It is an extraordinary raw material, harvested by hand, the fermentation of which is done with their own yeast culture and distilled in different stills. Thus Chamarel can produce different styles of rums, lighter styles distilled in a simple Barbet column or heavier styles, having undergone a double distillation, in a Cognac still and an Armagnac.
This rum comes from pure cane juice, distilled in September 2014 in a simple column.
Aged 4 years in Mauritius and bottled in 58% cask. Total production 2284 bottles
