Rum, Guyana
Aged initially in the tropical climate of Guyana from 1999 to 2002, this Wild Parrot then continued its maturation in the continental climate of the United Kingdom until 2023. Elegantly alternating between empyreumatic, exotic and vegetal sequences, its palette of flavours and aromas successfully maintains the freshness acquired in the prime of its youth. The bourbon-cask ageing has at the same time enabled it to develop a mature expression delicately interwoven with floral, vanilla and liquorice notes.
TASTING NOTES
Nose : Rich, well-developed. Tropical (pineapple, banana), fibrous (sugar cane) and spicy (ginger, clove), the first nose is also medicinal (ointment) and camphoric. Allowed to breathe, aromas of beeswax and white florals (lily of the valley, lily) appear alongside notes of rubber and vetiver.
Appearance : Deep golden yellow.
Palate : Lively yet smooth. On the attack, citrus fruit zest (lime, grapefruit), grated ginger and fresh cane sugar seep deep into the taste buds. The vegetal mid-palate plunges us into the cane harvesting period. Cane flower perfumes fill the air.
Overall : Long, well-balanced. Behind a very pleasant salinity, the finish first allows a glimpse of delicate vanilla, herbal and exotic (pineapple, kaffir lime) flavours. The creamy after-taste returns to liquorice and bitter tones (cinchona, gentian).
