Single Malt Whisky, Scotland/Highlands
Founded in 1798, Highland Park is one of Scotland’s oldest distilleries. Staying true to tradition, it still manually malts about 25% of the barley used in its single malt production on-site.
This malt is first dried over peat fire for 8 hours, then over coal for 19 hours. The malted barley sourced from Simpsons malting, however, is unpeated.
This nuanced edition emphasizes the “coastal” and rustic character of this single malt, highly admired by enthusiasts. Sunny yet remarkably fresh with fruity and herbal notes, its aromatic and flavours profile is a marvel of balance.
Colour : Bright gold.
Nose : Rich and pulpy. Initially, a delicate herbal peat takes centre stage, quickly giving way to fruity (yellow melon, walnut), herbal (dandelion, grass), and floral (daffodil, daisy) aromas. As it aerates, gentle yet intense spices (cinnamon, nutmeg) add depth to the aromatic palette.
Palate : Lively and elegant. More expressive than the nose, the flavours profile is smoothly vanilla-laden (milk tart). It then gains volume, revealing citrus (lemon, grapefruit) and green liquorice flavours. Shifting course, it ventures into vibrant fruity notes (Williams pear, Golden apple).
Finish : Long and silky. Radiant and fresh, the tasting reaches its equilibrium with refined mentholated, honeyed, and fruity flavours of great intensity. In the aftertaste, candied lemons and pears spread their tangy, liqueur-like juice around the palate.
