The Triple “A” movement brings together winemakers who work in opposition to technological vinification, which tends to blur the identity of the terroir.
Located near Mamaor in the hills of Valeggio dil Mincio, about ten kilometres from Lake Garda, the Monte dei Roari estate was taken over in 2007 by Stefano, grandson of the founder, and his wife Alessia. The estate covers 10 hectares, divided into small plots of moraine and clay-limestone soil, where local grape varieties such as Garganega, trebbiano, pinot grigio, corvina, merlot and molinara are planted.
It was their background in the food industry that made them choose the path of organic conversion in the vineyard (certified biodynamic since 2011) from the start, banning the use of chemicals. In the cellar, the work is just as meticulous: zero intrants used during the winemaking process, no filtration or clarification, the addition of sulphur is also very limited. They use steel and concrete vats as well as a few terracotta amphorae. All this contributes to producing wines of great drinkability, where the fruit expresses its full identity.
Tribolà is a fresh, fine and accessible sparkling wine, refermented in the bottle. This 100% pinot grigio wine is light, but full of dynamism, flesh and balance. Without frills, it immediately shows itself for what it is: fresh, fleshy and expressive.

Profile: Pure and sincere.
Nose: Fresh and airy. Lime, pear, milky, toasted notes and white peach.
Palate: Lively and fresh. Pastry notes, mandarin, eucalyptus and honeysuckle.
Finish: Juicy and persistent. Quince, orange zest, jasmine and bergamot.
