Aged for several months in new oak in a dry cellar before continuing its maturation in a red oak cask in a humid cellar, this version was transferred to a demi-john in 2010 to maintain its intense fruity character. Beaming with maturity and yet surprisingly fresh, over time its palette of flavours and aromas has taken up root in the prestigious terroir of Grande Champagne, presided over by the Vallein Tercinier family of Saintonge since 1850.
