Clairin, Haiti

The Chelo distillery in Saint-Michel de l’Attalaye is owned by Michel Sajous and produces a clairin from the Cristallin sugarcane variety. The third edition of Vieux Sajous, this version highlights the impressive power of a distillate transcended by ageing in casks previously used for Trinidad & Tobago’s famous rum Caroni. Then, once it has reached its fulcrum, it allows a full expression of the marvelously exotic, floral, chocolate and powdery tones in its flavor palette.
