Clairin, Haiti
Made in the Chelo distillery, owned by Michel Sajous, this Clairin type rum has aged for almost 4 years in Haiti. It is a blend of 12 barrels that have previously contained, for some, Scottish single malt from the Benriach distillery, and for others, Caroni rum. Magnificent bridge between the world of Clairin and that of rum, whether in terms of aroma or taste, this old Sajous demonstrates an extraordinary delicacy of touch. Finely liquorice and very lightly toasted (hazelnut, rusk), however, it always has in focus the fields of Cristalline sugar cane, a non-hybrid endemic and organic variety from Haiti. Instantly, wild raspberries land with extreme softness on the surface of the palate. Magnificent.
